Nasi lemak is a national favourite among Malaysians,any time,any where. It is a Malay dish usually consumed during breakfast. Generous portions are individually packed for picnics, as a snack, or meals. Normally it is served with fried peanuts and sliced cucumber with half a hard boiled egg and SAMBAL IKAN BILIS (ANCHOVIES IN HOT SAUCE). Ingredients:
1 cup rice |
2 cups thick coconut milk |
3 screwpine leaves (daun pandan) |
salt |
Directions:
1. Clean rice and drain. 2. Cook rice in coconut milk with screw pine leaves. Add in salt. 3. If desired, add in some sliced shallots and ginger. 4. Cook in rice cooker or till fully absorbed. |
