I would say you could use the jam of your choice in this one. Ingredients:
2/3 c. sugar |
1/2 c. margarine |
1/4 tsp. salt |
1 tsp. vanilla |
1/2 c. jam |
1 tsp. nutmeg |
pecans may be added |
1 egg |
1 1/2 c. flour |
1/2 c. milk |
2 tsps. baking powder |
1 tsp. cinnamon |
1 tsp. allspice |
Directions:
1. Beat the egg, sugar, and margarine together, then add other ingredients. 2. Mix well. 3. Put by tablespoons in baking cups in a muffin tin and bake for about 15 to 20 minutes at 375. 4. ==================================================== 5. CARAMEL ICING FOR ABOVE: 6. 1 c. brown sugar 7. 1/3 c. milk 8. 1/3 c. margarine 9. 2 c. powdered sugar 10. Combine the sugar and butter in a sauce pan, melt over low heat, then add the milk and let just come to slow boil. 11. Remove from heat. 12. Run the powdered sugar through a sieve and then add to the first mixture. 13. Beat with a spoon until it stands in a peak. 14. Ice cup cakes and decorate with a pecan. |
