I made this for dinner when I had some hamburger meat I needed to use up. My husband and two of my sons liked it. It is super easy and inexpensive. Ingredients:
1 cup of leftover chopped cooked chicken or 1 cup taco meat |
1 cup small dry pasta |
1 cup grated zucchini |
1/2 cup cottage cheese |
1/2 cup shredded cheese |
1 cup water |
1 teaspoon dried chives |
1 tablespoon chicken base |
Directions:
1. Heat the water, boullion and chive to boiling. 2. Meanwhile mix the first 5 ingredients in an ovenproof dish. I use a round caserole with a lid. Once the boullion is disolved pour over the meat macaroni mix. 3. Bake in 350 oven for one hour. This can be flavored many ways like by adding chile, olives or by hiding more veggies in it. |
