One Bowl French Apple Cake |

I don't know why this is called French except maybe for the French wine or brandy. it's easy and good, a recipe in my collection for one bowl cakes Ingredients:
1 1/2 sticks butter or good quality butter blend margarine, very soft ( your finger will make an easy identation when touched ) |
4 large eggs, room temperature |
1 1/2 cups flour |
1 1/3 cups white granulated sugar |
1/ 4 tsp baking powder |
dash salt |
zest of one small lemon |
2 tsp clear vanilla |
2 tbs french dessert white wine ( i use lilleth ) or apple brandy |
4 small to medium apples, peeled and sliced |
glaze optional |
melted apple jelly |
powder sugar if desired |
of course vanilla ice cream too if desired |
or even a bit of raspberry compote on the side |
Directions:
1. Grease and flour a good quality 10 inch round cake pan 2. Preheat oven to 375F 3. In a large bowl, place all ingredients in order listed EXCEPT APPLES and mix to blend smooth with an electric mixer at medium speed. 4. It should be thick 5. With a spatula blend 3 sliced apples into the batter 6. Scrape batter into pan and spread out evenly 7. Arrange remaining apple slices in a pin wheel fashion over the dough 8. Bake 375F middle oven rack ( I often use one of those insulated baking sheets to place pan on when recipes have a lot of sugar and butter in them ) 9. Bake 60 minutes OR until top is golden and center tests done with a cake tester 10. Cover with foil if browning too fast 11. Place pan on cooling rack for 15 minutes 12. Loosen sides, invert cake and reinvert again top apple side up on serving platter or cake plate and let cool 13. May heat up some apple jelly and spoon over the top or dust heavily with powdered sugar 14. Freezes well 15. Store uneaten portions covered with foil 16. Serve warm, room temp for best flavor. 17. Best the same day made and even the next day but I find butter cakes tend to stale easily |
