One Bowl Banana Fruit Cocktail Bread |

a wonderful combo of bananas, your favorite canned fruit cocktail and nuts if desired for a tasty , moist banana loaf Ingredients:
2 ripe bananas |
3/4 cup canned drained fruit cocktail- cube if large pieces ( peaches , pears, pineapple, cherries etc ) |
juice from 1/2 lemon |
2 eggs |
1 tsp vanilla |
1/2 cup oil or melted butter or margarine |
1 cup sugar |
2 cups flour |
1 tsp b.soda |
1 tsp b.powder |
dash salt |
1 tsp vanilla |
1/4 cup chopped nuts ( walnuts, pecans, etc ) |
Directions:
1. Add ingredients to a bowl except nuts 2. Beat until well mixed with electric mixer 3. Stir in nuts 4. Place mixture in a greased and floured 9 x 5 inch loaf pan 5. Bake 350F 45-60 minutes or tested done with toothpick 6. Remove from pan to rack to cool completely 7. Wrap and let mellow overnight before slicing |
