I combined several recipes and memories of a recipe my mom used to make for this one.It's close to the original,but not as sweet.Without the oil,it's probably a little healthier too.It's called One apple,but one isn't quite enough.I substituted Crisco for the butter per pkg. instructions. Ingredients:
3 large eggs |
1 cup sugar |
2 1/2 cups flour |
3/4 cup applesauce |
1 cup butter |
1/2 teaspoon vanilla extract |
1 teaspoon ground cinnamon |
1 teaspoon baking soda |
1/2 teaspoon salt |
2 apples, peeled, cored and sliced |
1/2 cup raisins |
Directions:
1. Prehear oven to 350 deg. 2. Grease a 9 by 13 inches baking dish.(I used glass). 3. Beat eggs,sugar,butter,vanilla & apple sauce in lge.bowl with mixer on med. spd. until well blended. Add flour,cinnamon,baking soda and salt gradually & mix until well blended. 4. Stir in raisins. 5. Spread batter evenly in pan.Push apple wedges into batter in three rows lengthwise-not touching. 6. Bake for 35 minute or until toothpick inserted in middle come out clean. |
