This recipe receives its name from the time my daughter and I raided the fridge and pantry for ingredients on hand to make a salsa for tortilla chips. The result ended up being a very light and refreshing pico de gallo. Read more . Dice the veggies in larger chunks for a great summer side salad.
Ingredients:
1 large cucumber peeled, seeded and diced
2 large tomatoes, chopped
1/2 cup red onion, finely diced
1-3 jalepeno peppers, with seeds removed, finely diced
2 cloves minced garlic
1/4 cup chopped cilantro
juice from 1 lime
1 tablespoon vinegar
salt and pepper to taste.
Directions:
1. Chop and chop then mix.
2. Wonderful taste sensation.
