This recipe receives its name from the time my daughter and I raided the fridge and pantry for ingredients on hand to make a salsa for tortilla chips. The result ended up being a very light and refreshing pico de gallo. Read more . Dice the veggies in larger chunks for a great summer side salad. Ingredients:
1 large cucumber peeled, seeded and diced |
2 large tomatoes, chopped |
1/2 cup red onion, finely diced |
1-3 jalepeno peppers, with seeds removed, finely diced |
2 cloves minced garlic |
1/4 cup chopped cilantro |
juice from 1 lime |
1 tablespoon vinegar |
salt and pepper to taste. |
Directions:
1. Chop and chop then mix. 2. Wonderful taste sensation. 3. Fresh is always best. |
