this can be made with light or regular ingredients, and is an easy way to get breakfast ready. (In our house of 2, there are also leftovers for easy weekday breakfasts). We serve with fresh fruit and whole wheat toast. Ingredients:
6 eggs |
diced ham |
chopped onion |
chopped red bell pepper |
light shredded cheese |
Directions:
1. Spray 12 cup muffin tin with nonstick spray and heat oven to 375 2. in a bowl combine diced onion, pepper, ham and cheese. (we pick our amounts based on how many weight watcher points we want to spend, but there is usually more onion and pepper than ham and cheese!) 3. divide fillings among muffin tins 4. whisk together 6 eggs with some fresh black pepper. Divide among tins 5. bake about 20 minutes. |
