This is from my Mom's recipe cards. I have not tried this. Ingredients:
8 eggs |
1/3 cup milk |
1 (12 ounce) can luncheon meat, diced |
1 (10 ounce) box frozen chopped spinach, cooked and drained |
salt |
pepper |
2 tablespoons butter |
Directions:
1. Beat eggs with milk until fluffy. 2. Add remaining ingredients except butter. 3. Melt butter in skillet. 4. Pour mixture into skillet. 5. Cook over low heat five minutes or until firm and slightly brown on bottom. |
