Once-a Month Cooking recipe from the book OMAC Family Favorites. It's great and not greasy like some quiches can be. Ingredients:
1 lb lean ground beef |
1 tablespoon oil |
1/2 cup mayonnaise |
1/2 cup milk |
3 eggs |
1 tablespoon cornstarch |
1/2 cup chopped onion |
2 cups shredded swiss cheese |
salt and pepper |
1/2 teaspoon cayenne pepper |
1 (4 ounce) can sliced mushrooms |
2 unbaked 9-inch pastry shells |
Directions:
1. Brown the ground beef in large skillet with oil, drain, and cool. Pour the browned beef into a large bowl with the remaining ingredients, except the pastry shells. Divide the mixture into two labeled 1-gallon bags and freeze. Mark and freeze the 2 unbaked 9 inch pastry shells. 2. To serve, thaw the bag of ingredients and the pastry shells. Pour thawed ingredients into shells. Bake in preheated 350F oven for 40 to 50 minutes, covering the pasty edges with foil until the last 10 minutes of baking to prevent them from burning. 3. Makes two pies. |
