A very tasty olive-zuchini spread. Enough to feed a crowd Ingredients:
2 pkgs (8oz eea.) cream cheese |
3 c shredded zucchini |
1 jar(7-1/2 oz) marinated artichoke hearts,drained and finely chopped |
1/4 c pimiento-stuffed olives,chopped |
1 can (4-1/4 oz) chopped ripe olives |
18 garlic cloves,minced |
3 tb chopped red onion |
2 tb minced fresh cilantro |
2 tb lime juice |
2 tb olive oil |
1 green onion,chopped |
1 french bread baguette,sliced |
Directions:
1. In large bowl,combine first 11 ingredients;beat till blended 2. Transfer to serving bowl;cover and chill for at least 4 hours or overnight. Serve with baguette slices,crackers or veggies. |
