These make wonderful appetizers or sides to almost any meal. Just a little something different from the usual salad. Feel free to change up the olives to suit your taste. Enjoy! Ingredients:
12 spicy marinated green pitted olives (or any green pitted olive of choice) |
12 whole grape or cherry tomatoes |
12 leaves of fresh basil, washed and dried |
12 mini fresh mozzarella balls |
12 pitted kalamata olives |
2-3 tablespoons extra virgin olive oil |
1-2 tablespoons basalmic vinegar, optional |
fresh ground black pepper, to taste |
12 extra long toothpicks or 6 skewers |
Directions:
1. Thread all ingredients onto toothpick in this order: green olive, tomato, basil, mozzarella, and kalamata olive. 2. Arrange onto serving plate. 3. Drizzle with extra virgin olive oil and basalmic vinegar (if using). 4. Crack fresh ground black pepper over all, to taste. 5. Serve. |
