Olive Penne (Black & Green Olives) |

Penne with a sauce of black and green olives plus olive oil Peter's creation after sampling it in a restaurant. Ingredients:
3 ounces penne (dry) |
3/4 tablespoon olive oil |
1/2 cup black olives (canned) |
1/2 cup green olives (bottled) |
1 ounce olive oil |
Directions:
1. To a pot of boiling water add the penne and 2 tsp olive oil. Boil for 10-15 minutes. Drain. 2. Add 3/4 of the black and green olives to an electric chopper. Process into small, fine pieces. 3. With the remaining olives, slice into larger pieces but do not process them in the chopper. 4. Add to the drained penne, all the olives and the remaining olive oil. Mix well and serve. |
