When it's just too hot to use the oven, making a big bowl of pasta salad to east during the week is the perfect solution! Ingredients:
1 1/2 cups elbow macaroni or pasta of your choice |
jar of olives (i used guiliano brand olives) |
2 cloves of garlic |
parmesan cheese (grated, fresh is best) |
3 tablespoons balsamic vinaigrette (i used newman's own) |
1 dash italian seasoning |
1/2 cup peas or cooked soy beans |
salt and pepper |
Directions:
1. Boil your pasta and drain, add to a large bowl. 2. Dice up a handful of olives or as many as you'd think you like. 3. Mince garlic 4. Mix in all ingredients, don't forget to add a splash of olive juice from the jar or tub for an extra kick of flavor! 5. Refrigerate and enjoy for a nice snack when it's too hot! |
