Great appetizer for all of us olive lovers! Use as many types of olives as you like. Marinate at least 3 hours. Ingredients:
vinaigrette |
1/4 cup white balsamic vinegar |
1 garlic clove, mashed |
3/4 cup olive oil |
salt and pepper to taste |
olives |
whole kalamata olives |
whole greek black olives |
garlic stuffed olives |
artichoke bottoms |
ciliegine mozzarella, cut into chunks |
Directions:
1. Place vinegar, garlic, and seasonings in a mixing bowl. 2. Slowly whisk in oil. 3. Pour over cheese, olives and artichokes 4. Cover 5. Allow to marinate a few hours 6. Thread onto small appetizer kabobs and place on a platter 7. Garnish with fresh basil and parsley |
