From Veggie Revolution by Sally Kniedel and Sara Kate Kniedel The dish is an excellent source of healthy oils, from both the olives and the walnuts Ingredients:
1 cup black olives |
1 cup olives, green |
2/3 cup walnuts |
2 cloves garlic, chopped |
1 tablespoon thyme |
1 tablespoon olive oil, if needed |
Directions:
1. In blender or food processor, combine all ingredients except the olive oil. 2. Blend until the spread is mostly smooth. Add a little olive oil at a time if it is too chunky to blend. 3. Makes 3 cups. 4. Mediterranean Sub: spread onto a toasted whole wheat sub roll and heap with Italian Artichoke Salad, lettuce leaves, strips of red bell pepper and slices of red onion. |
