I don't remember where I found this recipe, but it's tried and true, and my family loves it! Note: Wrap these really well in Saran wrap, and they'll keep in the fridge for about a week. These need to be at room temperature before serving. Ingredients:
1 pound sharp cheddar cheese, grated fine (soft) |
1 pound cream cheese, softened to room temperature |
1 small bottle pimiento stuffed olives, drained well and chopped fine |
1/4 teaspoon chopped parsley flakes ( i usually add a little more!) |
1 - 2 tablespoons grated onion, more or less, to taste |
1 cup pecans or walnuts, chopped fine |
Directions:
1. Use your hands to mix all ingredients really well, then roll into 1 or 2 cheese balls. 2. Roll into chopped nuts, covering completely. 3. Wrap in Saran wrap and refrigerate (overnight is best) until ready to serve. 4. Serve with your favorite veggies and crackers. |
