Olive Flavored Veggies With Potatoes |

This is a dish that's flavored with olives and the brine from the olive jar. made this dish with whatever I had from the market and it turned out great! The vegetable mix can be altered according to whatever is in your fridge. This is ideal as either a side dish or on its own if you're vegetarian. Ingredients:
2 tablespoons olive oil |
15 small yukon gold potatoes |
3 garlic cloves |
5 carrots |
2 large portabella mushrooms |
1/2 cup olives in brine |
salt and pepper |
Directions:
1. Wash and halve all of the potatoes. 2. If using larger potatoes, cut them into bite-size pieces. 3. Chop the garlic. 4. Chop up carrots into bite size pieces. 5. Using a deep skillet or saucepan over low-medium heat, put in the olive oil, potatoes, carrots, and garlic and cover. 6. Wash and slice up the mushrooms. 7. Add the sliced mushrooms, olives, and olive brine to the pan and cover. 8. Let it cook for about 20 to 30 minutes (until the potatoes and carrots are ready). The brine will steam and flavor the ingredients. 9. Add salt and pepper to taste. The olive brine might be salty enough so taste it before adding any salt. |
