A tasty, lemony, Moroccan dish that goes well with rice. Note: Be careful with the salt as the olives are already salty. Ingredients:
1 (2 to 3 pound) whole chicken, cut into pieces |
2 tablespoons vegetable oil |
2 onions, chopped |
salt to taste |
ground black pepper to taste |
1/2 teaspoon ground ginger |
1/2 teaspoon paprika |
1 pound pitted green olives |
1 lemon, juiced |
2 cups water |
Directions:
1. Heat oil in a large saute pan. Add onions, and sprinkle with ginger and paprika. Saute until onions are golden. 2. Place chicken on top of onions. Add about 1 to 2 cups of water, lemon juice, salt, pepper, and olives. Cook about 1 hour, or until the chicken is tender. |
