This potato recipe is so incredible you better double it, I promise, it is that good. Enjoy Ingredients:
2 pounds idaho potatoes scrubbed clean and dried |
3 fresh tomatoes washed and dried |
5 olives chopped |
juice of 1 lemon |
1/2 bunch parsley chopped |
2 tablespoons olive oil |
3 tablespoon butter |
1/2 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
Directions:
1. Cut tomatoes in half then toss with olive oil and season with salt and pepper. 2. Place cut side down on a baking sheet and cook at 250 for 5 minutes. 3. Remove from oven then cool completely and chop. 4. Bake potatoes at 375 for 1 hour then cool slightly and peal and mash with a fork. 5. Add remaining ingredients including tomatoes then serve while hot. |
