Olive and Arugula Flatbread Pizza Salad |

Use any flatbread, pita, or thin sliced Italian bread. Ingredients:
flatbread pita bread or italian bread |
2 teaspoons extra virgin olive oil |
2 tablespoons extra virgin olive oil |
1 teaspoon fresh lemon juice |
1 teaspoon red wine vinegar |
2 cups baby arugula leaves |
1/4 cup olive tapenade |
6 pimiento stuffed green olives, sliced |
1 ounce parmesan cheese, shaved |
salt & freshly ground black pepper |
Directions:
1. Brush bread with 2 teaspoons olive oil. 2. In a jar, combine 2 tablespoons olive oil, lemon juice, vinegar, 1/4 teaspoon salt and 1/8 teaspoon black pepper; shake to combine. 3. Toss dressing with arugula. 4. Grill flatbreads, over medium heat, until golden brown, 1 or 2 minutes, turning once. 5. Spread grilled flatbreads with olive tapenade, leaving a two inch border. 6. Top with arugula, olives, and Parmesan. |
