A chewy walnut layer dominates this lovely creation. A shortbread crust and lemony glaze holds it all together. Ingredients:
1 1/2 cups flour |
1/2 cup brown sugar |
1/2 cup butter, plus |
2 tablespoons butter |
2 eggs |
1 cup brown sugar |
2 tablespoons flour |
1/2 teaspoon baking powder |
1 teaspoon vanilla |
1/2 teaspoon salt |
1 1/2 cups coconut |
1 cup chopped walnuts |
2 cups powdered sugar |
2 tablespoons melted butter |
1 lemon, juice of |
Directions:
1. For base: Mix and pat into greased 9x15 pan. 2. Bake about 12 minutes at 350 degrees. 3. For filling: Beat eggs. 4. Add sugar, combined dry ingredients, then rest of ingredients. 5. Spread over baked layer and bake 20 minutes. 6. For glaze: Combine and spread over cookie when cooled. 7. If needed, add more sugar or lemon juice to adjust consistancy. |
