This very tasty goulash is adapted from the Volumetrics recipe of the same name. It goes very well with a whole wheat pasta or a hearty piece of crusty bread. Ingredients:
2 tbsp cooking wine |
2 tbsp cornstarch |
1 tbsp olive oil |
1 pound beef, round roast, lean |
1/2 tsp salt |
1/4 tsp pepper |
1 cup onion |
1 tsp garlic |
2 cups bell pepper, diced |
1 cup beef broth, nonfat, low sodium |
2 cups potatoes, chopped |
2 cups carrots, chopped |
1 cup celery, chopped |
12 oz green beans, chopped |
2 tbsp paprika |
1/2 tsp thyme |
Directions:
1. In a pot, cube and cook beef with wine 2. add vegetables, spices, and broth and simmer for 2 hours. |
