From the 'Cooking with the Wild Women of the West' cookbook. (haven't made this yet but it sounds interesting and fun) Ingredients:
1 20 oz can pineapple chunks |
1 8 oz bag shredded coconut |
1 pkg yellow cake mix |
stick butter |
Directions:
1. Into a greased 9x13 pan pour pineapple chunks with juice, sprinkle with coconut, dump cake mix over this and smooth. Do not mix! Dot entire surface with pats of butter. 2. Bake at 350 for 40 - 50 mins until light brown. |
