These remind me of Grandma's!
Ingredients:
1/2 cup butter, softened
1/2 cup butter flavor shortening
1 cup white sugar
1 cup brown sugar
2 eggs
1 cup creamy peanut butter
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
Directions:
1. Cream the butter, butter flavored shortening, white sugar and brown sugar. Add eggs, one at a time, until blended. Add peanut butter and vanilla. Add dry ingredients until blended.
2. Drop cookies by tablespoonsful or with a cookie scoop about 3 inches apart on an ungreased cookie sheet. Lightly criss-cross with a fork dipped in sugar.
3. Bake in a pre-heated oven at 375 degrees about 8 to 10 minutes until cookies are set and just lightly browned. Do not overbake! Let rest on cookie sheets about 2 minutes before removing to a cooling rack.
