Ingredients:
1/3 cup raisins |
1 tablespoon all-purpose flour |
1/3 cup butter or margarine, softened |
3/4 cup firmly packed brown sugar |
1 cup canned pumpkin |
1/2 cup milk |
1/4 cup molasses |
2 eggs, beaten |
2 cups sifted all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
1/2 teaspoon ground ginger |
1/2 teaspoon ground nutmeg |
1/8 teaspoon ground cloves |
Directions:
1. Combine raisins and 1 tablespoon flour; stir well, and set aside. 2. Cream butter; gradually add sugar, beating well. Add pumpkin, milk, molasses, and eggs, beating well. 3. Sift together flour, baking powder, salt, and spices; add to creamed mixture, stirring just until dry ingredients are moistened. Stir in raisins. 4. Spoon batter into greased muffin pans, filling full. Bake at 375° for 20 minutes. |
