Old Prison Recipe Potato Salad |

In my youth I rebelled against my parents by dating a guy whose roommate was fresh out of prison. He'd learned this recipe from a guy 'on the inside'. I make it in the summer for picnics- it's a good conversation piece! Read more ! Ingredients:
6-8 red skinned potatoes, boiled, unpeeled and cubed |
5 or so hardboiled eggs, roughly chopped |
2 celery stalks, diced |
2-3 green onions (spring onions), green and white part, chopped |
4-5 radishes, cut in half then sliced |
3 dill pickles, patted dry and diced |
1-2 europeen weiners, sliced into 1/8 inch circles |
1-2 pepperoni sticks, sliced into 1/8 inch circles |
few dashes of paprika |
4 parts mayo, 1 part dijon mustard (or to taste) |
Directions:
1. Combine all the chopped ingredients into a bowl and add mayo, mustard and paprika. Mix until coated & chill. 2. You may want to adjust the amount and ratio of mayo & mustard. I do it by feel, and I couldn't even guess how much I use, but I like it saucy. 3. Depending on the size of your potatoes, you may need more than 8. |
