Old Fashiontransparent Pie |

This is an old fashioned pie from yester-year back when the ladies would cook with what they had on hand, especially since the local store was hours away. Ingredients:
preheat oven to 450 degrees |
2 cups sugar |
1/2 stick butter, margarine can be substituted,(but not the spreads ) |
1 cup cream (evaporated milk) (isn't living in the modern age grand ) |
4 eggs they must be slightly beaten before adding to the other ingredients |
2 t all purpose flour |
1 t vanilla extract |
1 unbaked 9 pie shell (make your own or buy one from your local grocer) |
Directions:
1. Put dry beans into pie shell this will hopefully keep pie shell from bubbling up and make it lay flat, then put shell in oven and bake for about 15 minutes. Take out and let cool. 2. In a medium size bowl, combine sugar and butter and mix until crumbly. 3. Add one cup cream and mix thoroughly. 4. Add beaten egg one at a time, mixing after each addition, should be 4 eggs 5. Mix in flour 6. Add vanilla and mix altogether. 7. Remove beans from empty pie shell, discard beans. 8. Pour mixture into pie shell, place pie in middle rack of oven. 9. Bake 450 degrees for 15 minutes, lower heat to 350 and continue to bake for an additional 20 minutes. 10. Pie will be shakey in appearance, it will jell as it cools. 11. This is a rich tasting pie and absolutely delicious, it is also one of those pies that taste better after it has been in the refrigerator and cooled off. It really does taste better after the flavors have had a chance to intermingle and cool off. I have always been able to make two pies out of this. Unless you make a deep dish, then not. Enjoy!!! 12.
