Old Fashioned Sugar Plum Cake |

from Southern Pallatee, Christy Jordans recipe post, I have almost similar cake called prunella cake in my files and this is indeed a good moist cake! Ingredients:
2 cups all purpose flour |
1 1/2c sugar |
3 eggs |
1 cup vegetable oil |
1 tsp baking soda |
1/2 tsp salt |
1 tsp allspice |
1 tsp cinnamon |
1 tsp nutmeg |
1 cup buttermilk |
1 tsp vanilla |
1 cup dried plums, chopped |
1 1/2 cup chopped nuts (i used walnuts) |
sauce |
1 stick margarine (or butter) |
1/2 tsp soda |
2 tsp vanilla |
1/2 c buttermilk |
Directions:
1. Grease and flour bundt or 9×13 cake pan. 2. Preheat oven to 350 degrees. 3. Combine all cake ingredients in a large mixing bowl. 4. Beat with electric mixer until well combined. 5. Pour into prepared cake pan and bake for one hour.- or tested done 6. Just before cake is done, place all sauce ingredients into a saucepan. 7. Bring to a boil, stirring constantly, and continue boiling gently until sauce is thickened, about two minutes. 8. Remove done cake from oven and poke holes all over top with a fork. 9. Pour hot sauce over hot cake. 10. Allow to sit in pan until sauce is absorbed. 11. Cool completely 12. My note: this cakes tastes even with a sauce and I have also made with a lemon sauce on the side! |
