Old Fashioned Pineapple Cheese Mold

Use as a refreshing salad course. Oldies but goody!
Ingredients:
1 3 oz pkg lemon gelatin
1 cup boiling water
3/4 cup pineapple juice
1 tbs lemon juice
1 1/4 cups drained crushed pineapple
1 cup shredded sharp cheddar cheese
1 cup cream whipped
Directions:
1. Dissolve gelatin in the water and add juices.
2. Chill until slightly thickened.
3. Fold in crushed pineapple, cheese and cream.
4. Place in 1 1/2 qt mold and chill firm.
5. Unmold .
6. Nice over lettuce leaf cups.
