Old Fashioned Fried Zucchini Strips |

My mom used to make fried zucchini and I think my grandma (her mom) did too out of all of those great fresh garden picks in Pennsylvania. I love this flavor but wanted to make it my way, with a dipping sauce. Ingredients:
2 -3 medium zucchini, ends trimmed, cut in half and sliced lengthwise in 3-inch long by 1/4 inch thick strips |
1/2 cup flour |
1/2 cup cornmeal |
2 eggs, beaten |
1 tablespoon salt |
1 teaspoon black pepper |
1 teaspoon italian seasoning, dried |
1/4 cup buttermilk |
1 tablespoon butter |
3 tablespoons olive oil |
3/4 cup sour cream |
1/4 cup mayonnaise |
2 garlic cloves, minced |
1/2 teaspoon red pepper flakes |
1 tablespoon parsley, fresh chopped |
1 teaspoon lemon juice, fresh squeezed |
1 teaspoon lemon zest |
Directions:
1. Make the sauce by mixing together all sauce ingredients. Season with salt and pepper to taste. 2. Whisk together Buttermilk and eggs in a shallow bowl. 3. In a separate shallow bowl, mix together flower, corn meal, salt, pepper, and italian seasoning blend. 4. Create a breading station using one hand for wet and another for dry ingredients. Dip each Zucchini Strip in the egg mixture and cover with the dry mixture. Shake off excess. 5. Heat Butter and Olive Oil in a large skillet over medium high heat. Fry the breaded zucchini in the pan. Cook on each side for approximately 2 minutes or until browned and crispy on each side. You may need to do this in batches depending on size of pan. 6. Serve family style with the dipping sauce. |
