A recipe in my file, I had for years. I use this esp in the summer when cukes and dill are fresh. So easy yet people love these elegant, easy and delicious appetizer sandwiches Ingredients:
1 loaf of thin sliced packaged white bread |
( i,e pepperidge farm brand ) |
1 medium onion ( red or white ) |
1 cup mayonnaise ( not salad dressing ) |
salt and pepper |
1 long english cucumber |
1 bunch of fresh dill, cleaned and chopped |
Directions:
1. Grate the onion and mix into the mayonnaise with salt and pepper to taste. 2. Let refrigerate several hours or overnight. 3. Do not assemble sandwiches ahead of time or they may get to soggy. 4. Spread the onion mayonnaise mixture over the bread slices . 5. Peel the cucumber here and there leaving some green skin show. 6. Score with tinges of a fork and slice thinly. 7. Place 4 slices of cucumber on the bread. 8. Sprinkle with dill. 9. Cut into 4 squares or triangles. 10. For party fare; one may use a small round cookie cutter and cut out 2 pieces from each slice of bread and then proceed with the recipe. 11. Note: another cucumber may be used to finish off the remaining bread and onion Mayo. |
