This is a long time family favorite comfort food (if pies can be a comfort food). I think my mom told me that it originated with her grandmother who was a farmer which makes sense since all the ingredients are basic staple items. For the faster times, we have made it in the microwave and its actually easier because we don't have to worry about scorching... ENJOY! Ingredients:
1/2 cup butter |
1 cup sugar |
2 cups half-and-half (cannot use 2% milk) |
1/4 cup cornstarch |
1 pie crust, prepared (baked) |
nutmeg |
Directions:
1. Melt butter in double boiler. Mix in sugar into butter. 2. Mix 1/4 cup of half and half with cornstarch. 3. Add remaining half and half to double boiler butter/sugar mix. 4. Stir in half and half/cornstarch into the butter/sugar/half and half combination. 5. Heat over med-low heat, stirring constantly until thickens. 6. Pour into baked pie shell, lightly sprinkle with nutmeg (for garnish). 7. Bake at 400 degrees for 5 minutes. 8. Refrigerate. 9. FOR MICROWAVE - mix ingredients together in safe bowl, microwave for 10 minutes, stirring at 2 minute intervals until thick. Pour into prepared shell, sprinkle with nutmeg and bake at 400 degrees for 5 minutes. |
