Old Fashioned Corn Fritters

This recipe brings back memories. My mom and older sister used to make these and they are yummy!
Ingredients:
1 cup all-purpose flour
1 1/2 teaspoons baking powder
2 eggs
1/3 cup milk
1 1/2-2 cups leftover corn or 1 (15 ounce) can corn, drained
1 tablespoon butter, melted
oil (for frying)
salt and pepper
Directions:
1. Combine flour and powder in a large bowl.
2. In a medium bowl, beat eggs and milk.
3. Stir in corn and butter.
4. Stir gradually into dry ingredients until just blended.
5. In a deep fryer, electric frying pan or chicken fryer, heat oil until 375 degrees.
6. Drop batter into heaping teaspoonfuls into hot oil and fry for 2- 3 minutes.
7. You can also do this using less oil in a skillet, just flatten them a bit with the back of the spoon and then turn them like pancakes.
8. Drain on paper towels.
9. Some people put confectioner's sugar or syrup on these, we eat them plain.
