Old Fashioned Cooked Dressing |

Cheaper than mayonnaise, and SO good in potato salad, seafood salad or to blend with sour cream or whipped cream for other salads. Ingredients:
2 tablespoons flour |
1 1/2 teaspoons salt |
1 teaspoon dry mustard |
1 tablespoon sugar |
1/4 teaspoon paprika |
2 egg yolks or 1 egg |
1 1/4 cups scalded milk |
1/3 cup vinegar |
1 tablespoon butter |
Directions:
1. Mix flour and seasonings in top of double boiler. 2. Add beaten egg and mix well. 3. Add hot milk gradually, stirring constantly. 4. Cook over hot water til smooth and thick 12-15 minutes. 5. Remove from heat. 6. Add vinegar and butter. 7. Beat til smooth. 8. Chill. 9. Dressing may be thinned with cream, milk or french dressing. |
