Old Fashioned Banana Bread Pudding |

A cozy kind of dessert that's comforting and scrumptious. From Land-O-Lakes cookbook Ingredients:
1/4 cup butter or 1/4 cup margarine |
4 cups french bread (stale bread) or 4 cups sourdough bread, cubed (stale bread) |
3 eggs |
1/2 cup sugar |
2 cups milk |
1/2 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/4 teaspoon salt |
2 teaspoons vanilla |
1 cup banana, sliced |
3 tablespoons butter or 3 tablespoons margarine |
2 tablespoons sugar |
1 tablespoon cornstarch |
3/4 cup milk |
1/4 cup light corn syrup |
1 teaspoon vanilla |
Directions:
1. heat oven to 375*F. 2. in a 2-quart casserole melt 1/4 cup butter in oven for 4 to 6 minutes. 3. stir in bread cubes. 4. in medium bowl slightly beat eggs, stir in remaining pudding ingredients except bananas . 5. stir in bananas. 6. pour over bread cubes, stir to coat. 7. bake for 40 to 50 minutes or until a knife inserted near center comes out clean. 8. meanwhile in a 1 quart saucepan melt 3 tablespoons butter over medium heat. 9. stir in sugar and cornstarch, add remaining ingredients except for vanilla . 10. continue cooking, stirring occasionally until sauce come to a full boil, about 3 to 4 minutes. 11. stir in vanilla. 12. serve sauce over warm pudding. |
