Old Fashion Split Pea Soup |

Pea Soup! Ingredients:
2 cups dried split green peas |
1 ham bone (trim off fat) |
1 cup onion, finely chopped |
1 cup celery, finely diced |
3 tablespoons butter or 3 tablespoons margarine |
3 tablespoons flour |
Directions:
1. Pick over and wash 2 cups (1 lb.) dried green split peas. 2. Soak overnight in 12 cups cold water - *Do not drain*. 3. Add the ham bone (trim off fat), finely chopped onions, and finely diced celery. 4. Bring slowly to boiling point. Cover and simmer 3 hours or until peas are tender. Remove ham bone. Cut off any meat, finely dice and return to soup. Skim of fat. 5. Combine 3 tbsp butter or margarine and 3 tbsp flour. 6. Blend in about 1 cup of soup into this mixture and then stir this mixture back into the soup and bring to a boil, stirring constantly. 7. Season to taste – the amount of salt will vary with the saltiness of the ham. |
