Great way to enjoy summer squash using the food processor for a speady dish. Ingredients:
1 lb summer squash, blanched |
1 medium onion |
1 egg |
15 unsalted saltine crackers |
2 tablespoons butter |
1 cup sharp cheddar cheese, shredded |
old bay seasoning, to taste |
Directions:
1. Chop squash in food processor. 2. Add onion, egg, crackers and butter. 3. Process until pureed. 4. Pour into a small buttered casserole dish. 5. Spread cheddar cheese on top. 6. Push some of the cheese down into the squash mix. 7. Bake at 350 degrees for 30 minutes. 8. Let stand for 5 minutes after removing from oven. 9. Sprinkle Old Bay seasoning on top to taste. 10. Enjoy. |
