Okra Spanish Gazpacho

This is awesome and so refreshing. Packed with all sorts of vitamins and a great way to get your 5 vegetables in. Enjoy.
Ingredients:
5 ripe tomatoes
1 green bell pepper
1 medium red onion
3 cups vegetable juice
1/4 cup chopped green olives
1/4 cup virgin olive oil
2 small stalks celery
1 cucumber halved peeled and seeded
8 crisp okra pickles
1/2 cup cilantro
1 medium avocado
1 teaspoon salt
1 teaspoon freshly ground black pepper
sour cream
Directions:
1. Blanch tomatoes in boiling water for one minute and peel skin.
2. In a food processor chop all vegetables very fine then season with salt and pepper.
3. Reserve a small amount of veggies for garnish.
4. Refrigerate everything for 1 hour.
5. Pour gazpacho in bowls and add reserved veggie, avocado and sour cream for garnish.
6. Add some cilantro to top as a final garnish.
