My favorite way to use okra, and besides...it is good. I usually make this in the summer when okra is plentiful, but I have also used frozen okra successfully. NOTE: I should have put this notice here before, but just didn't think! Okra should be chopped by hand. The food processor makes it way to slimey to work with. Ingredients:
1 lb okra, chopped fine |
1/2 cup onion, chopped fine |
1 teaspoon salt |
1/4 teaspoon pepper |
1/2 cup water |
1 egg |
1/2 cup flour |
1 teaspoon baking powder |
1/2 cup cornmeal |
bacon grease (for frying) or oil (for frying) |
Directions:
1. Combine okra, onion, salt, pepper, water, and egg and mix well. 2. Mix flour, baking powder, and cornmeal and add to okra mixture, mixing well. 3. Heat oil to medium-high, drop okra by heaping tablespoons into hot oil and cook until brown on both sides. |
