Trying to replicate a local okra curry Ingredients:
2 cups frozen okra, chopped |
1 tablespoon olive oil |
1 teaspoon cumin seed |
1 onion, chopped |
1 tomato, diced |
1 teaspoon curry powder |
1/2 teaspoon salt |
1/2 teaspoon chili powder |
Directions:
1. Microwave the okra for about 4 minutes. 2. Heat the olive oil over medium heat in a sauce pan. Add cumin seeds. Stir till they swell which is about 2 minutes. Add onion. Stir and cook for about 3 minutes. Add tomato and cook for another 3 minutes. Add the rest and cook for about 3 more minutes. |
