1 medium onion, chopped |
1/2 cup (or less) vegetable oil |
1 tablespoon flour |
salt and pepper, to taste |
1 cup water |
13/4 cup fresh or frozen okra |
1 (141/2 ounce) can tomatoes, drained and chopped |
1 cup shredded cheddar cheese |
Directions:
1. Saute onion in oil in skillet. Stir in flour, salt and pepper. Add water. 2. Cook until thickened, stirring constantly. Layer okra, white sauce, tomatoes and cheese in a lightly greased baking dish. 3. Bake at 325-350 degrees for 35 minutes. 4. This recipe comes from a book published in 1954.
