Okra Casserole - 1954

Ingredients:
1 medium onion, chopped
1/2 cup (or less) vegetable oil
1 tablespoon flour
salt and pepper, to taste
1 cup water
13/4 cup fresh or frozen okra
1 (141/2 ounce) can tomatoes, drained and chopped
1 cup shredded cheddar cheese
Directions:
1. Saute onion in oil in skillet. Stir in flour, salt and pepper. Add water.
2. Cook until thickened, stirring constantly. Layer okra, white sauce, tomatoes and cheese in a lightly greased baking dish.
3. Bake at 325-350 degrees for 35 minutes.
