Ingredients:
2 pounds okra, cleaned |
1 medium onion, chopped |
1/4 cup chopped green pepper |
2 tablespoons vegetable oil |
1 (14 1/2-ounce) can whole tomatoes, undrained |
1 tablespoon vinegar |
1 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Cut okra crosswise into 1/2-inch slices, and set aside. 2. Sauté onion and green pepper in oil in a heavy skillet over medium heat until tender. Add tomatoes, vinegar, salt, and pepper; stir well. Cover and cook over low heat 5 minutes. Add sliced okra; cover and simmer 1 hour. |
