Okra and Tomato Skillet is an easy to prepare, tasty and nutritious side dish. Your family and friends will love this recipe all year long. It is a great way to serve okra. Ingredients:
1 lb fresh okra, sliced |
2 tbs olive oil |
1/4 cup chopped onion |
1 garlic clove, minced fine |
1/2 tsp dried thyme, crushed |
1/8 tsp crushed red pepper |
2 medium tomatoes |
Directions:
1. Heat about 1 cuo of salted water to boil in a small saucepan; add okra. 2. Cover and cook okra over medium heat until tender, about 10 minutes; drain. 3. Heat olive oil in large skillet over medium-high heat until hot. 4. Add the onion, garlic, thyme and crushed red pepper. 5. Cook and stir until onion is tender; add tomatoes, salt and pepper to taste; cook and stir for 5 minutes. 6. Add cooked okra and cover, continue cooking for 5 minutes longer. 7. Garnish with chopped parsley. |
