Ingredients:
1 3/4 cups cornmeal |
1/4 cup all-purpose flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
2 eggs, beaten |
2 cups buttermilk |
1 cup cracklings |
Directions:
1. Combine cornmeal, flour, baking powder, and soda; mix well. Add eggs, buttermilk, and cracklings, stirring well. 2. Heat a well-greased 9-inch cast-iron skillet in a 400° oven for 3 minutes. Pour batter into hot skillet. Bake at 400° for 35 minutes or until golden brown. |
