1-3/4 cup cornmeal |

1 teaspoon baking powder |
1 teaspoon baking soda |
2 eggs, beaten |
2 cups buttermilk |
1 cup cracklings |
Directions:
1. Preheat oven to 400-degrees F. 2. Combine cornmeal, flour, baking powder, and soda; mix well. 3. Add eggs, buttermilk, and cracklings, stirring well. 4. Heat a well-greased 9-inch cast-iron-skillet in oven for 3 minutes. 5. Pour batter into hot skillet. 6. Bake for 35 minutes or until golden brown. |
