Ingredients:
4 yams (sweetpotato or wateryam tuber)
1 medium onion
cilantro (hand full-chopped)
1/2 cup flour
2 eggs
salt & freshly ground black pepper
oil
Directions:
1. Peel and grate yams, squeeze out any excess water; add egg, flour, onion and cilantro; season with salt and pepper.
2. Heat about 1 of oil in skillet; Drop yam mixture by large spoonfuls into hot oil; cook 3-4 minute on each side or until golden brown.
