Recipe calls for native wateryam tubers, but yams can be used instead. Flavored with cilantro and onion, these make a great side for any meat dish. I found this . Ingredients:
4 yams (sweetpotato or wateryam tuber) |
1 medium onion |
cilantro (hand full-chopped) |
1/2 cup flour |
2 eggs |
salt & freshly ground black pepper |
oil |
Directions:
1. Peel and grate yams, squeeze out any excess water; add egg, flour, onion and cilantro; season with salt and pepper. 2. Heat about 1 of oil in skillet; Drop yam mixture by large spoonfuls into hot oil; cook 3-4 minute on each side or until golden brown. |
