I've always loved quesadillas, but I hated the fact that whenever I put them in the microwave, they ended up soft, and whenever I wanted them crispy I had to fry them in oil. Here is a great crispy quesadilla on the stove without the oil. Delicious, and under 500 calories. :) Ingredients:
2 soft taco-size flour tortillas |
1/3 cup monterey jack cheese |
2 tablespoons salsa |
Directions:
1. 1. Put a large skillet on the stove at medium heat. 2. 2. Shred about 1/3 (or a bit more if you wish) into a bowl. 3. 3. Add 2 TBS of your favorite salsa (I use my own homemade). 4. 4. With a fork, mix the salsa in with the cheese (It's okay if you smush the cheese a little bit). 5. 5. After the pan is hot, put in a tortilla, followed by your cheese/salsa mixture, and then the other tortilla. 6. 6. Turn the stove to high, and put the lid over the skillet for 5 minutes, flip, then cook on the other side. 7. 7. Immediately take off the stove and serve. :) Enjoy. |
