This is a cross between country fried potatoes and french fries. Ingredients:
3 lbs medium or large russet potatoes |
6 cups oil for frying |
seasoning |
1 t salt |
1 t garlic salt |
1 t paprika |
1/2 t pepper |
Directions:
1. Leave skins on or off, your choice. I like them on. Cut potatoes in half lengthwise then lengthwise again to make quarters then lengthwise again to make eights. These planks are on the (country) large side but will cook up wonderfully. If you like thinner fries, be my guest to cut them more. 2. Place cold oil and fries in a dutch oven. Turn burner on high and boil for 20 minutes, stirring after 10 minutes. Timer starts as soon as you turn the burner on. 3. Drain and season fries. Seasoning is enough for several batches. Add your favorite condiment or even some shredded cheese. 4. This method uses less oil than country fried potatoes or even french fries. |
