Oh So Quick Cold Night Soup |

A good healthy soup that reaches the soul on those cold, frosty nights! Ingredients:
1 large onion, chopped |
1 cup chopped celery |
4 cloves garlic, minced |
2 cans mixed vegetables,drained |
1 large can whole tomatoes |
small can of tomato paste |
6 cups chicken or vegetable stock |
2 teaspoons italian seasoning |
2 potatoes, peeled and cubed |
2 cups large elbow macaroni |
3 carrots, chopped |
1 teaspoon cracked pepper |
salt to taste |
1/2 stick butter |
Directions:
1. In large soup pot saute onions, celery, garlic in butter until tender. 2. Add broth and bring to a boil. 3. Crush tomatoes and add to broth. 4. Stir in vegetables, potatoes, and carrots. 5. Cover and cook over medium heat for 10 minutes. 6. Stir in seasonings, paste, and macaroni. 7. Continue to cook, covered for 20 minutes. 8. Adjust seasonings and cook an additional 5 minutes. |
